Developed by New Mexico State University's Chile Pepper Institute, the NuMex 6-4 pepper is a specific variety of chile pepper that was created through a breeding program aimed at producing a mild green chile pepper with excellent flavor. The NuMex Heritage 6-4, which is the most commonly found Hatch variety in supermarkets, is an improved New Mexico green chile with mild heat and great flavor. The original New Mexico 6-4 seed from a 1957 seed bank was used to reselect this variety with all the best attributes. The result has more flavor with higher yields and more uniform heat. All of the improved New Mexico green chile cultivars from New Mexico State University carry the 'NuMex' name.

We specialize in providing plants for the five main Hatch chile varieties:

The NuMex 6-4 pepper is named after its development code, "6-4," and it has gained popularity for its consistent performance, disease resistance, and versatility in cooking. It is known for its medium heat level and is often described as having a rich, earthy flavor. This variety is typically harvested when green, but it can also be allowed to ripen and turn red, at which point it develops a sweeter taste. The NuMex 6-4 pepper is commonly used in a variety of dishes, including salsas, sauces, and traditional New Mexican cuisine.

    Fantastic seeds

I’ve tried various pepper seeds over the years, and these seeds stand out for their quality. The seeds had a high germination rate and the plants have been very productive. The peppers have a wonderful taste – a nice combination of heat and sweetness that is perfect for all sorts of recipes. The instructions included with the seeds were clear and helpful, making the growing process straightforward. I highly recommend these seeds to any pepper lover.

    The best chile

I bought these because they are the typical variety that we see in our stores labeled as hatch. The shipping was fast and so far the seeds are growing fast too! I put them in the ground a month ago and they're like 4 inches already!
